Ingredients

1 can mandarin oranges in light syrup
    12 ounces fresh cranberries
    1/2 cup sugar
    1/2 cup water

Tips

If you want a spiced cranberry sauce, add some cinnamon and cloves to this recipe. I like the flavor of the tart cranberries and the sweet oranges just as it is!

Directions

Put the sugar and the drained-off light syrup in a saucepan with enough water to make up 3/4c liquid (about 1/4 cup water). Bring to a simmer, then simmer for five minutes. While simmering, take a spoon and mash up the mandarin oranges in the can. When the 5 minutes has passed, add the oranges and the cranberries to the liquid, adding (if needed) just enough water to barely cover the berries, and simmer until the cranberries have started to pop and the liquid is acquiring a reddish tint. Using the back of a large spoon, mash some of the cranberries in the saucepan, and simmer until it starts to slightly thicken up. Remove from heat, pour into a container, and let cool until it's safe to put it in the fridge, then stash it there until it's time to eat.
