Ingredients

1 1/4 lb 80/20 lean beef
1-2 eggs, large
1Tbsp dried basil
1 1/2 tsp garlic powder
1/2 tsp fresh ground salt
1/4 tsp fresh ground pepper
1 medium onion, choppped
1/2 cup unsweetened applesauce
1/2 cup italian seasoned bread crumbs
1/2 cup sugar-free cranberry relish
1/2 cup medium-hot salsa
Tips
I make my own cranberry sauce with no sugar added:
12 oz fresh or frozen cranberries
2 tart apples such as Granny Smiths, rough chopped
1/2 cup Truvia Baking Blend
1/2 cup sugar-free orange marmalade (I use Smuckers)
6 oz fresh r frozen raspberries
Add to food processor and pulse until the relish reaches the texture you prefer. Save the rest of it for other dishes like chicken or turkey. This sauce adds about 22.5 g of carbs, 7.1 g of sugar
Directions
In a large bowl, break up the ground beef
Add egg and squoosh into the meat
Add basil, garlic powder, sal and pepper and mix roughly into the meat mixture
tosas in the onions and continue to knead into the meat until well mixed
Add half of the applesauce and half of the bread crumbs and mix into the beef mixuture
Add the rest of the applesauce and bread crumbs and continue to mix until everything is well incorporated.
Turn into a glass or stoneware pie plate and form into a large doughnut shaped loaf.
Cook in the microwave for 10-12 minutes on high
In the meantime, mash or blend the cranberry sauce and salsa until smooth.
When the meatloaf has finished cooking for 10-12 minutes, spoon half of the sauce over the top and cook for another 2-3 minutes
Let sit for 5 minutes in the microwave
Serve with the rest of the sauce, if desired and, of course, mashed potatoes and sweet peas.
