Introduction

Light and refreshing fruit and nut salad which is as satisfying as ice cream. Light and refreshing fruit and nut salad which is as satisfying as ice cream.

Ingredients

    16 oz Cottage Cheese, 1% Milkfat
    4 oz Cool Whip Free
    1 sm. box Sugar-free Orange Gelatin
    8 oz Can Pineapple Tidbits, in own juice
    6 oz Can Mandarin Oranges
    1/2 cup Pecans, chopped

Directions

Pour drained pineapple, mandarin oranges and pecans into a bowl. Add Cottage Cheese, Cool Whip and Orange Gelatin. Mix until blended. Leave in the bowl or place into individual portion controlled containers. Cover and Chill until set.

Use any kind of nut you prefer. I like it with walnuts.

Don't tell your family, it's Cottage Cheese. They'll never guess!

    Very Good
    I thought it was very good but would have been helpful to list the box size of the gelatin as I bought the bigger one and it made it too sweet. I also addd walnuts instead and it was good. - 2/11/08

    Incredible!
    Oh wow! I have not thought about this recipe in years. I used to make it back when my kids were little, it is so delicious and guilt free! The only difference is, I have never added pecans, I can't wait to try it with them! - 2/10/08
