This is a wonderful dessert to surprise people with during the holidays! The cranberries give it a beautiful festive look and complement the sweet pineapples wonderfully! The best part is how low-calorie and low fat it is. Using club soda and applesauce instead of eggs and oil saves serious calories (and makes it vegan)! Ingredients

    Glaze:
    1/4 c sugar
    1 t cinnamon

    Cake:
    1/2 box of moist-style yellow cake mix (about 1 1/2 cups)
    1.5 t baking soda
    1/2 c club soda
    1/4 c unsweetened applesauce


Tips

If cake doesn't seem to want to come out, warm it up a bit by sticking it back in the oven (on a low setting) for a few minutes.

If you really want to get crazy, make two and layer them! Of course, that doubles the calories, but you could probably get extra servings out of it. And, it would look AMAZING!

If everything flips but pineapples stick to cake pan, just carefully add them to the cake on the serving dish.


Directions

Preheat over to 350. Use a stick of butter the grease a 9-inch cake pan. Make sure the pan is well-greased otherwise it might stick when you go to flip the finished cake!

In a small bowl, combine sugar and cinnamon. Put in bottom of greased cake pan and spread it around evenly. Arrange pineapple slices on the sugar and place cranberries in the holes and empty places - the more the merrier - but keep them on one even layer.

In mixing bowl, combine cake mix, baking powder, club soda and apple sauce. Mix well.

Pour batter over pineapples. Bake for 30-35 minutes, until house smells amazing and toothpick comes out clean.

Let cool for 15-20 until still just a bit warm. Place serving dish over cake pan and carefully flip.
