Ingredients
-
Large jar of natural peanut butter (40 oz) [ingredients: peanut butter, salt]
1 cup honey
½ cup ground flax seed
2 cups almonds (crushed in food processor)
Approx. 5 scoops of whey protein (or soy for Laura)
Tips
Finished balls can be stored in the refrigerator, but do not require refrigeration.
Directions
Dump all the very precious peanut butter into a large mixing bowl – scraping to make sure you get every drop!
Add honey and mix thoroughly
Add flax, mix
Add protein powder, one or two scoops at a time, mixing until solid dough forms – similar to cookie dough or play dough
Add almonds, mixing again to distribute evenly throughout
Form 1 inch balls, pressing to compact as you shape them. Rest balls on wax paper while you continue (it takes a while) to form more. Refrigerate overnight to allow the protein and flax to absorb the moisture from the peanut butter.
