    2 medium beets (280g)
    3 medium carrots (280g)
    1 medium-large sweet potato (280g)

Tips

Add powdered or freshly grated ginger for more zip. Top with a squeeze of fresh lime, orange, or lemon juice and a spray of olive oil.


Directions

Grate the vegetables with a food processor or box grater. Layer in a medium-sized covered casserole dish, with the sweet potatoes on the bottom and the carrots on top.

Bake for an hour (or until all veggies are soft) in a 300-degree oven.
