Ingredients

    Chop up one cup of each ingrediant:
    Red Cabbage
    Endive
    Apple
    Carrots
    Partially peeled Cucumber
    Green Pepper (or red/yellow)
    Scallions
    Garbanzos, Blueberries, Walnut pieces (each one cup)
    Kraft Creamy Poppyseed Dressing or any sweet/sour dressing you like.

Directions

1. Chop all ingredients and beans and nuts last.

2. Measure and mix with dressing, adjust to taste.

Options:
You can add radishes, pomegrante seeds, raisins, kidney beans, pecan pieces, and so much more! It all tastes great!

    This was pretty good. I couldn't get endive at the grocery so I substituted with the arugula. Forgot to buy scallions and carrots so omitted those. I toasted the walnuts. I used Marzetti poppy seed dressing. If I make this again I would like to make the dressing. Makes a beautiful dish! - 5/29/09

    This was excellent. I brought this to a party and people came back for seconds and thirds. Easy to make. Used Brianna's Creamy Poppy Seed Dressing. Kept the nuts separate for those who wanted to sprinkle on the top. - 3/16/08
