Ingredients

    1/2 cup cut up carrot
    1/2 cup cut up celery
    1/2 cup chopped onion
    1 clove minced garlic
    3 1/2 cups canned diced tomatoes
    4 cups beef broth or bouillon
    8 cups water
    1 bay leaf
    1 teaspoon basil
    1 cup raw pearl barley
    1 1/2 cups mixed vegetables, frozen or canned and drained.

Directions

Mix all but barley in stockpot. Bring to a boil, add the barley and simmer for about an hour until barley is cooked. Remove bay leaf before serving.

Season with salt and pepper as desired.
