Ingredients

    1 pound of ground meat (chicken, lamb or beef)
    1/2 an onion grated
    1/4 cup of chopped parsley
    3 minced garlic cloves
    1 tsp of paprika
    1/2 tsp of cumin
    1/2 tsp of pepper
    1 tsp of salt
    1 tsp of ginger (only if you are using chicken ground meat)
    Hot chili pepper to taste
    1/2 Tbsp of olive oil
    3 tomatoes
    1/2 an onion grated
    3 oz of tomato paste
    1 cup of water
    1/2 tsp of paprika
    1/4 tsp of cumin
    salt and pepper to taste
    2 Tbsp of olive oil
    3 eggs

Directions

Preparing the meat:
1- Mix all the meat ingredients together and mix well.
2- Roll the meat into small meat balls.

Preparing the sauce:
1- Cut the tomatoes in half and grate them. Disregard the tomato skin.
2- On medium heat, drizzle the olive oil in your cooking pan.
3- Add the grated onion, tomatoes, paprika, cumin, salt, and pepper.
4- Cover the pan and let the spiced mix come to a boil.
5- When the sauce starts boiling, add the meat balls in the pan.
6- Dilute the tomato paste in the water and add it to the cooking pan.
7- Let the meat cook for 40 minutes.

Final Steps:
1- Once the meat is cooked, transfer the meat and sauce into a flat pan.
2- Add the 3 eggs to the meat and sauce, cover the flat pan and let the eggs cook for 5 minutes.

Serving:
Serve the Kefta Tajine with bread and Moroccan Mint Tea.
