Number of Servings: 42

Ingredients

    3 cups warm water
    1 cup 9 grain cracked cereal mix
    1/8 cup millet
    1/2 cup raw sunflower seeds
    1/8 cup sesame seeds
    1/4 cup vital wheat gluten
    1/3 cup Flaxseed, ground
    1/3 cup honey
    1 1/2 T instant yeast
    1 1/2 T dough enhancer
    1 T salt
    6-8 cups whole wheat flour

Tips

*I usually need about 6 1/2 cups of flour. I use a Bosch mixer.
**Makes great pizza dough and cinnamon rolls.


Directions

Using a heavy-duty mixer like a Bosch or Kitchenaid, combine water, cereal, millet, sunflowers seeds, and sesame seeds (optional) in mixer and cover. Let rest 10 minutes.
On low speed(1), add in next 5 ingredients. A smooth batter will form.
Add Salt. Then start adding flour one cup at a time until dough no longer clings to side of bowl*.
Turn to speed 2(on Bosch), knead for 10 minutes. Will be smooth and elastic.
Divide into 3 balls, form loaves.** Let rise in a warm area until dough doubles. Bake at 350 for 25-30 minutes.


Serving Size: 36-48 slices depending on how thick you make it
