Ingredients

    -1 9-inch unbaked whole wheat pie crust
    -1 15-oz can of pureed pumpkin
    -1 cup unsweetened almond milk
    -1/4 cup brown sugar
    -1/2 tsp Stevia (powder or liquid is fine)
    -2.67 tbsp cornstarch
    -1.5 tsp cinnamon
    -1/2 tsp ground nutmeg
    -1/2 tsp ground ginger
    -1/2 tsp salt

Tips

Pumpkin pies taste best if they have a long time to set before serving. This recipe is best prepared the night before!


Directions

1) Preheat the oven to 350 degrees.
2) Let the pie crust start to defrost while you prepare the other ingredients.
3) Combine all ingredients, except the crust, in a blender until completely mixed and smooth.
4) Pour the filling into the pie crust.
5) Bake for about 1 hour, or until the pie is mostly set and slightly brown on top.
6) Remove the pie from the oven. Expect the pie to appear slightly uncooked, as it continues to set while it cools.
7) Allow the pie to fully cool, at LEAST 2 hours, before serving it.
8) Enjoy!
