Ingredients

    3 lbs. chicken pieces (thighs used in Nutrition Info)
    2 tbsp. olive oil
    1 large onion, halved and thinly sliced (about 1 cup)
    1 large red bell pepper, cut into bite-sized strips (about 1 cup)
    4 cloves garlic, minced
    1 tsp. finely shredded orange peel
    1 cup orange juice
    1/2 cup chicken broth (use low sodium/fat to improve nutrition facts)
    1/2 cup salsa
    2 cups black beans (approx. 1 can)

Directions

1. Skin chicken. Rinse and pat dry. In 4 qt. Dutch oven or very large skillet cook half of chicken in hot oil about 15 minutes until lightly browned evenly. Repeat with remaining chicken. Remove all chicken from pan and sprinkle with salt and black pepper, set aside.
2. Add onion, sweet pepper, and garlic to pan. Cook until onion and pepper are slightly tender. Return chicken to pan. Add orange peel, orange juice, broth, and salsa. Bring to boiling. Reduce heat.
3. Cover and simmer 35-40 minutes until chicken is tender and not pink. Add beans to chicken mixture and heat through.

Serves 8.
