Add some southwest style spices, a trio of sweet bell peppers, and a little shredded swiss and green onion garnish, and you have a spicy little meal or side dish. Ingredients

    1 cup canned white beans, drained and rinsed
    1 cup canned red kidney beans, drained and rinsed
    2 oz. (56 grams) penne rigati pasta
    1/8 cup sweet red bell pepper, diced
    1/8 cup sweet yellow bell pepper, diced
    1/8 cup sweet orange bell pepper, diced
    1 T. chili powder
    1/4 tsp. crushed red pepper flakes
    1 cup canned whole tomatoes with juice
    2 stalks green onion, chopped
    1/8 cup shredded swiss cheese

Tips

*I used multigrain pasta in this recipe, but you may try gluten-free as well if you have wheat intolerance.
*Swiss cheese is lower in sodium than most cheeses. If you desire a different cheese, just remember to adjust your nutrition/calorie info.


Directions

Heat water for pasta to boil in small to medium saucepan. Add penne and cook for recommended time (usually 11-13 minutes). Meanwhile, pour 1 teaspoon olive oil in sauté pan. Add diced peppers and sauté a couple minutes. Add chili powder and crushed red pepper flakes. Add red and white beans and whole tomatoes. Break up tomatoes a bit with spatula and allow mixture to reduce. When pasta is to desired texture, drain and add to sauté pan. Cook an additional 1-2 minutes. Serve on plate and top with shredded swiss and chopped green onion. Add more seasoning if desired.
