    3/4 cup salted Cashews
    1 T honey
    1 t cayenne pepper
    2 T Canola Oil - separated
1 lb boneless, skinless chicken breast, raw, diced
1 large red bell pepper, diced
1 jalapeno pepper, sliced thin (with or without seeds, per your tolerance for spicy)
    1 yellow onion, diced
    2 T Hoisin sauce

Serve with brown rice, and scallions over the top if desired.

Heat Wok pan and add 1 T of the canola oil, add cashews just until they are slightly browned and toasted. Remove them to a bowl and add the honey and cayenne, stir and set aside.
Heat Wok and add the other T of oil, then add chicken, cooking until done, remove from pan and add the red and jalapeno peppers, and the onion, stir fry about 3 miutes, then add the chicken and it's juices back into the wok, along with the cashew mixture, then add the hoisin and stir until mixed together and heated through.
