Ingredients

    White Rice, long grain, 1.5 cup
    *Campbell's low sodium chicken broth, 2 cup
    Water, tap, 6 oz
    Salt, 1 tsp
    Pepper 1 tsp
    Portabella Mushrooms, 100 grams (3.5 oz) diced
    Spinach, fresh, 1 cup roughly chopped
    Velveeta Light Cheese Product, 6 oz, diced
    Bacon, 3 medium slices, cooked, drained well and crumbled

Directions

Combine rice, chicken broth and water in a sauce pan. Bring to a boil, cover and simmer for 20 minutes. Remove from heat. Add mushrooms, velveeta and spinach until cheese is melted. Add crumbled bacon and salt and pepper. Enjoy!
