Introduction

Got this recipe from Price Chopper (our local grocery store) and have made it twice. My whole family liked this one which says alot for the recipe. The recipe says to use a grill but I used my George Foreman grill and it worked beatifully. Also, you can use Promise Margarine to lower the fat grams. Ingredients

    1 1/2 lb - Haddock Fillets
    1/2 tsp - Salt
    1/2 tsp - Pepper
    4 - Small Garlic Cloves, minced & divided
    1/4 cup - Chopped fresh Basil, divided
    1/4 cup - Chopped fresh Italian Parsley, divided
    1 tsp - Grated Lemon Peel
    2 Tbsp - Margarine
    2 Tbsp - Lemon Juice

Directions

1. Coat grill rack with nonstick cooking spray. Preheat grill to medium-high heat. Sprinkle fillets evenly with salt & pepper.

2. Combine 2 garlic cloves, 2 Tbsp Basil, 2 Tbsp Parsley, and lemon peel in a shallow bowl. Gently press both sides of fish fillets into garlic mixture. Coat fillets evenly with cooking spray.

3. Grill fillets, covered with grill lid, 5 to 7 minutes on each side or until fish flakes with a fork. Arrange fillets on a serving platter. Cover and keep warm.

4. Melt butter in a large skillet over medium-high heat. Add remaining garlic and cook 1 minute. Add lemon juice and remaining basil and parsley.
Bring to a boil. Remove from heat. Spoon sauce over fish. Serve Immediately.
