Introduction

Ingredients

Bottle gourd, 5 cup
*Kohlrabi, 85 gram(s)
Bell Pepper - Green - 1 large (164 grams), 150 gram
Red Ripe Tomatoes, 190 grams
Onions, raw, 80 grams
Leonardo Olive oil Net 100 ml, 30 gram(s)
Yellow Mustard, 1 grams
Turmeric, ground, 1 tsp
*Cumin seed, 1 tbsp
Garlic, 3 cloves
Ginger, ground, 1 tbsp
Garam masala 1 tsp (2g), 45 gram(s)
Splitz Tamrind concentrate Net 227 g, 15 gram(s)
Tips
Add only very little water as the vegetables release a lot of water.
Directions
1) Wash bottle gourd, peel, slice length-wise and transeversely into 1/2 inch pieces and then slice those in half. Keep aside.
2) Wash, slice and add bell pepper to above.
3) Wash, julienne and add kohlrabi to above.
4) Cook all of the above with water and salt.
5) Take wide-based pan. Add oil, splutter mustard, add diced onions, wait till they turn translucent, add turmeric, ginger and pounded garlic. Mix well. When aromatic, add cumin.
6) Add diced tomatoes. Saute.
7) Add vegetables, water,tamarind and garam masala. Cook over high flame.
Serving Size: Makes eight 1-cup servings
