Number of Servings: 8

Ingredients

    2 large sweet potatoes, cooked and mashed (about 4 cups)
    1 1/2 cup splenda
    1 1/5 cup unsweetened vanilla almond milk
    1-2 tbs vanilla
    3 tsp cinnamon
    1 tsp ginger
    3/4 tsp cloves
    1/2 tsp nutmeg

Tips

I enjoy this crustless, use a ice cream scoop , place a portion in a martini glass with a dalop topping and boom,,, you have a great dessert


Directions

set oven to 425 degrees
peel and cube sweet potatoes , cook for about 20 minitues in microwave until soft. cool and then puree in foodprosser or with mixer, add milk , splenda and spices , add the eggs and blend well. if you want a pie now would be the time to pour mixture ito crust and bake as you would a pumkin pie, I like to go crustless,
bake for 20 minutes at 425, lower oven to 350 and bake til set in the middle , about 50 minutes. cool and enjoy with s/f cool whip or fresh whipped cream

Serving Size: make 8 to 10 servings,, my house 8 maybe less when we are really piggin
