A tasty, Southwest spin on a classic comfort food. A tasty, Southwest spin on a classic comfort food.

Ingredients

    2 slices light wheat bread
    3 oz chicken breast, grilled and thinly sliced
    1 tbsp barbecue sauce
    1 slice reduced fat cheddar cheese
    1 tsp light Caesar or Ranch salad dressing

Directions

Toss the grilled chicken with 1/2 tbsp of barbecue sauce and warm in microwave for 30 seconds.
Spread 1 slice of bread with barbecue sauce and the other with Caesar or ranch salad dressing.
Layer sandwich with chicken and cheese and grill in nonstick pan coated with cooking spray until cheese melts and bread is golden brown.

  • This was really good! Tasted like fast food but didnt make me feel guilty! Lol I used leftover slow cooker chicken and shredded it. I also left out the ranch just because you can't even taste a teaspoon of it so why add the calories?? - 11/2/12
