Ingredients

1 1/4 Cup Casbah Organic Quinoa (Red or Regular)
1 Pomegranate (seeds only)
1 Orange (diced)
1 small Red Onion (finely chopped)
1 tbsn Cider Vinegar
1 Tbsn Olive Oil
Fresh herbs, salt and pepper (to taste) - I like fresh thyme!!!
Tips
If you like it spicy - add Epicure Pepper and Lime Spice or serve with hot pepper sauce!
For breakfast - omit the onion.
Directions
1. Cook the quinoa as per directions (Rinse first and cook slowly on stove - 20 min - with 2 1/2 Cup Water).
2. Roast the onion in olive oil.Add to quinoa.Cool completely.
3. Add the remaining and ingredients and mix.
Serve cold.
Serving Size: 6 large servings (about 1/2 Cup per serving)
