Ingredients

    Chicken
    Enchilda Sauce
    Brown Rice
    Picante Sauce
    Mexican Cheese
    Black Bean
    Corn and Peppers

Directions

Preheat oven to 400 degrees.

Use non-stick spray on 13x9 inch pan.

Cook the brown rice. If using instant, skip this step.

Mix all ingredients together, with the exception of 1 cup cheese. (Black beans should be rinsed and drained).

Cook for 20 minutes.

Top with remaining cheese.
