Ingredients

    Ingredients:


    1 cup Fiber One Cereal
    1 Egg
    1/4 cup Canola Oil
    2 - 8 oz cartons light flavored yougurt (any flavor desired)
    1 1/2 cup flour
    2 Tbls. brown sugar
    1 1/4 teaspoons baking soda
    1/2 teaspoon salt
    1 teaspoon cinnamon
    1 1/2 cup mixed fruit (Blueberries, Strawberries, raspberries, cranberries, crushed pinapple, chopped apple. etc.)
    1/2 cup Post Bran Flakes Cereal
    1/4 cup flax seed ground
    1/2 cup Walnuts chopped

Directions

1. Heat oven to 400°F. Place paper baking cup in each of 24 regular-size muffin cups, or grease bottom of each muffin cup with oil spray. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
2. In medium bowl, stir together egg, oil and yogurt. Add cereal, flour, brown sugar, baking soda, cinnamon, flax and salt; stir just until dry ingredients are moistened. Gently stir in berries and/or fruit and walnuts. Divide batter evenly among muffin cups, filling each 3/4 full.
3. Bake 18 to 20 minutes or until golden brown. Immediately remove from pan.

    Moist !!! I made mini muffins ..( made 43... any idea on the calories of mini's ? ) I used crushed pineapple ( 1C ) and 1/2 c. blueberries !!! Next time I will try applesauce instead of oil ..... - 3/10/10
