Ingredients

    2 Cups Dry Quinoa
    1 Red Bell Pepper'(chopped)
    1 Cucumber (pealed and chopped)
    1 Red Onion (chopped)
    1 Can Red Kidney Beans (rinsed)
    1 Can Black Beans (rinsed)
    1 Cup Apple Cider Vinegar
    1/2 cup vegetable oil (or olive oil)
    Salt/Pepper

Tips

To lower the fat content, use less oil. To lower the calorie content, use less beans or quinoa.


Directions

Cook the Quinoa according to the package directions. When the Quinoa is cooled, add the vegetables, beans, and dressing. Season to taste.
