Introduction

Ingredients

    2 Turkey Thighs with skin & Bone
    5 oz cremini mushrooms sliced
    4 Garlic Cloves peeled and cut in half
    2 TBS Fresh Rosemary, finely chopped
    2 TBS Garlic Infused Olive Oil


Tips

Original recipe called for White wine, and nicoise olives which I did not have. Also, recipe called for 2 tbs of olive oil. I cooked the turkey in two batches, hence the second tbs of oil.


Directions

Spray bottom of skillet with Olive Oil Spray. Add mushrooms and cook until soft. Remove mushrooms, and set aside. Wipe out pan and add one TBS olive oil. Season Turkey with Salt and pepper. Add garlic and rosemary and Put Turkey into pan and brown turkey and garlic on all sides.
Return mushrooms to pan and add broth, scraping bottom of pan with wooden spoon, to pick up all the flavor. Cook about 3 minutes.
Reduce heat to low cover and simmer gently for 1 hour. Sprinkle tomatoes Cook about 5 minutes more.
