Ingredients
-
2 C oats
1 C protein powder (approx 100g)
1/4 chopped/slivered almonds
1/2 TBSP cinnamon
1TBSP unsweet. cocoa
*Mix, set aside
In another bowl, microwaveable. or saucepan:
1/4 c natural peanut butter
1/4c unsweet. almond milk
1/4c unsweet. applesauce
1/4 c chopped dark (i like 85%) chocolate
1tsp vanilla
Heat until creamy/smooth
Add wet to dry, mix. Stir in 1/4c raisins/cranberries unsweetened.
Press all into pan lined with wax paper. Refrigerate until hard. Turn out onto board, slice into desired size bars, refrigerate/freeze in single portions and grab to go.
Tips
100g protein powder is approx 1 cup not too packed. I weighed out 50 g loose in a 1/2c (125 ml) measure thus coming to the conclusion (using my large functioning brain) that 100g is approx 1 cup (250ml) of loosely packed protein. Feel free to use any protein you like, I prefer a pure whey isolate with nothing added. The original recipe also calls for 1/4 c (62.5 ml) honey/sweetener equivalent but I like bitter chocolate taste and cutting down on carbs. Could also leave out raisins/dried fruit for more lowering of the carbs.
Directions
Mix dry ingreds, set aside. Mix wet ingreds in separate bowl, add chopped chocolate. Heat until creamy/smooth. add raisins. Stir wet into dry, press into a pan lined with wax paper & refrigerate at least 60min. Turn out on cutting board, slice into desired bar sizes, wrap in wax paper or keep in tupperware. Probably could freeze as well for larger batches.
