Ingredients

    -1 large head of cauliflower
    -salt
    -2 c. skim milk
    -2 tbsp light butter
    -2 tbsp flour
    -2 oz fat free cream cheese
    -1 c. reduced fat shredded colby jack cheese
    -.25 tsp pepper
    -1/8 tsp garlic powder
    -.25 c. reduced fat shredded colby jack cheese
    -parsley

Directions

-Preheat oven to 375 degrees. Use a 8x8 square baking dish. Spray the dish with non-stick cooking spray.
-In a large pot, bring water to a boil. Add salt to the water.
-Cut cauliflower up into small pieces. Add to the water and boil until cooked (about 5 minutes)
-Drain the cauliflower and put in the baking dish. Let sit.
-In a sauce pan, melt the butter and add the flour. Stir until smooth. Add the milk and let thicken. Wisk in cream cheese until smooth. Add 1 c of cheese, pepper, garlic powder, and some salt. Stir until smooth.
-Pour cheese mixture over the cooked cauliflower. Top with remaining .25 c of cheese.
-Bake until bubbly (around 15 minutes).
-top with parsley

Serving Size: makes between 7 and 8, 1 c servings depending on how you cut the cauliflower
