Introduction

I love Reubens, but don't like all the fat and carbs. My version is lower in fat and carbs. I use the slow cooker, but this recipe also works well baked in the oven at 350 for 45 minutes. Number of Servings: 6

Ingredients

    3 whole chicken breasts (skin and bone removed)
    1 pkg Sauer Kraut
    6 slices Swiss cheese
    6T Lite Russian Dressing
    Salt and Pepper to taste

Directions

Drain sauer kraut and spread entire package in bottom of slow cooker. Please chicken breast halves evenly over kraut. Top with slices of Swiss cheese. Set slow cooker to 4 hours. When done, serve with 1 tablespoon of Russian Dressing on top of each chicken breast half.

Serving Size: makes 6 servings (1/2 breast)
