Number of Servings: 4

Ingredients

    Garbanzos, 2 cups
    Coconut Oil, 1 tsp
    Coconut Milk, 1/2 cup
    Thai Red Curry Paste (Thai Kitchen), 1 Tbsp
    Bell peppers, 1/2 cup, chopped
    Garlic, 1 clove
    Ginger Root, 1 tsp, finely chopped
    Kale, 1 cup, chopped
    Onions, raw, 1 cup, chopped
    *Bok Choy, shreaded, 1 cup
    Carrots, 1 cup, chopped
    *Nakano Seasoned Rice Vinegar, 1 tsp
    Cilantro, raw, 2 tbsp, chopped for garnish
    Salt to taste

Directions

Cook up some rice according to package directions.
Wash and chop all the vegetables.
Saute Oil, Ginger, Curry paste, Garlic, Carrot, Onion, and Bell pepper for 5 minutes.
Add the rest of the vegetables and coconut milk. Simmer another 5 minutes.
Add Garbanzos and rice vinegar. simmer another 5 minutes.
Serve over rice and garnish with cilantro.
