Ingredients

1.5 lbs. lean ground beef
1 large chopped onion
1/2 cup beef bouillon
1 large bag or 2 small bags frozen mixed vegetables
2 TLB Light Smart Balance Spread
2 TLB Worcestershire sauce
32 oz. Simply Mashed Potatoes
1 cup shredded cheddar cheese
Tips
If sodium is not a concern, add 1 tsp. Adobo seasoning to meat mixture.
Directions
Serving Size: Makes 8 good size servings
Preheat oven to 400 deg. Microwave frozen vegetables until almost done while browning ground beef and chopped onion in a hot skillet. After vegetables are done add Smart Balance to them; then microwave mashed potatoes until warm throughout. (A large 32 oz. container takes about 10 min.) Add beef bouillon and worcestershire to meat mixture and continue cooking on medium heat for a few minutes. Remove from heat. Add/stir vegetables into meat mixture. In a 9 x 13 baking dish or pan, spread meat/veggie mixture evenly. Top with an even layer of all the mashed potatoes. Bake at 400 deg. for 30 minutes, then add cheddar cheese to top and bake another 5 minutes.
