Introduction
My favorite chili recipe, but substituted with quinoa instead of meat. My favorite chili recipe, but substituted with quinoa instead of meat.Number of Servings: 6
Ingredients

1 yellow onion diced
1 tbsp of olive oil to saute onion
1 can of black beans
1 can of kidney beans
1 can of diced tomatoes
1 cup of red quinoa (Cook quinoa separately before adding other ingredients. I used the red quinoa because it looked like ground beef/meat.)
Directions
Wash and cook quinoa. I like to put 1 cup of washed quinoa in a pot with 1 3/4 c water. Bring to a boil and turn heat down to a simmer. Cover and cook for 15 minutes. Let sit for 5 minutes then fluff with a fork.
While your quinoa is sitting for those 5 minutes you will want to saute your diced onion with the oil. After fluffing the quinoa add it to the pot with the onions and saute together for about 3 minutes. Add the black beans, kidney beans and diced tomatoes. Stir up then add 1 tbsp of chili powder and 1tsp of ground cumin. Stir to mix up the spices. (Optional: I also added 1 tbsp of red chili pepper flakes to make give it a little kick.)
Let simmer for about 15 minutes. You may serve it with some cheese, sour cream, corn chips, etc.
Serving Size: Makes about 6 servings (approx. 1 cup servings)
