Ingredients

    3 eggs, beaten
    1 cup craisins
    1 cup white chocolate chips
    1 teaspoon vanilla extract
    3/4 cup butter
    3/4 cup packed brown sugar
    1/3 cup Splenda for baking
    2 cups all-purpose flour
    1/2 cup oat flour
    1 teaspoon ground cinnamon
    2 teaspoons baking soda
    2 cups rolled oats

Directions

Combine eggs, vanilla and craisins in a small bowl; cover and let stand for 1 hour. Preheat oven to 350 degrees F (175 degrees C). In a large bowl, cream the butter, brown sugar, and white sugar together. Place 1/2 cup oatmeal in blender and blend till it becomes flour. Sift together the flour, oat flour, cinnamon, and baking soda; stir into the creamed mixture. Then stir in the craisin mixture, rolled oats, and chocolate. Drop by teaspoonfuls onto an unprepared cookie sheet. Bake cookies for 10 minutes, or until lightly browned. Makes 3 dozen.
