Ingredients

    3 small potatoes shredded
    6 large eggs beaten
    1 cup diced ham
    1/4 cup shreded parm cheese
    olive oil spray

Tips

Can substitute frozen cooked hash browns for fresh potatoes, cook long enough to create a crisp bottom.


Directions

Rinse and dry hash brown shreds and season with s&p.
Spray 12 cup muffin pan with olive oil spray. Evenly distribute potato in each cup, lightly pressing on the bottom and up the sides. Bake 375 degrees for 15-20 min. until lightly crispy on the bottom and potatoes cookedthrough

Pour egg mixture into muffin cups until half full. evenly distribute ham over each cup. Bake 10-15 min until eggs are at desired doneness. Sprinkle cheese evenly in last 5 min of baking.
