Introduction

Quick & easy souffle you whip up in processor or blender. I usually use leftover roasted squash to make this. Makes a great meal with sautéed greens on the side. Ingredients

    1cup cubed butternut squash, cooked
    1/2 cup egg substitute
    2tbsp whipped cream cheese
    1/4 cup light sour cream
    1/2 tsp sage
    Pinch ground nutmeg
    Salt & pepper, to taste
    Cooking spray
    1 tbsp whole wheat breadcrumbs

Directions

Preheat oven to 375. Spray a two-cup, oven-safe glass bowl with cooking spray, then evenly coat bottom and sides with breadcrumbs.

Put all other ingredients in food processor or blender and purée until smooth. Pour mixture into prepared bowl & bake for 45-50 minutes, until puffed and soft set in center. Serve immediately.
