    Nabisco Ritz Crackers -25 Crackers
    1 Bag Red Pearl Onions (about 25 pieces) Cut each in 1/2...really small ones can stay whole.
    1 large Yellow onion chopped
    Scallions, raw, .25 cup, chopped
    Sour Cream, 1.5 cups
    Milk, 2%, .5 cup
    Egg, fresh, 2 large
    All-Purpose White Flour 1 Tbsp
    Nutritional Yeast, Vegetarian 2 Tbsp
    Country Crock Plus Calcium 2 Tbsp
    Salt and Pepper if desired.


For the Crust:
Line glass pie dish with crackers bottom and on sides. That's it--wanted to keep it easy.


For the filling:
Saute onions in Country Crock about 10-15 minutes. Add Salt and Pepper if desired.
Put in pie dish.
Mix together the remaining ingredients and pour over onions.
Top with scallions.

Bake 350 for approx. 30 minutes.

  • I made this for Thanksgiving dinner. Everyone loved it and it was sooo...easy!!! Thanks! It is a keeper. Plus I made it with Light Sour Cream, Low Fat Ritz crackers and skim milk.
