Number of Servings: 6

Ingredients

    *cactus, 2 cup chopped
    Onions, raw, 1 cup, chopped
    Red Ripe Tomatoes, 5 Italian tomato diced
    Cilantro, raw, 10 tbsp chopped
    Jalapeno Peppers, .33 cup, diced
    Salt, 1.5 tbsp
    Salt for water
    water for boiling

Tips

You can serve immediately but it can be made up to a few hours ahead of time to make it a bit easier.


Directions

bring a small pot of water to a boil and add salt. Add the cactus and let cook for about 10 minutes until they go from bright green to more of a army green. Strain in a colander and let cool. In the mean time chop the veggies, add the cactus to a bowl and mix in all the veggies and cilantro. Season with the tablespoon and a half sa;t untill it is to your liking.

Serving Size: Maked 6 side dhis servings or 3-4 for a vegetarian taco option
