Introduction

This is an awesome change from tomato soup for those chilly Winter nights. With just a hint of spice it pairs up great with grilled cheese! This is an awesome change from tomato soup for those chilly Winter nights. With just a hint of spice it pairs up great with grilled cheese!

Ingredients

    Cooking spray
    1 small onion, chopped
    4 cups cauliflower, chopped
    3 cups carrots, chopped
    1 tsp Garam Masala
    1.5 tsp curry powder
    .5 tsp cinnamon
    1 tsp salt
    1 Tbsp vegetable base/bouillon
    5 cups water

Directions

Spray Dutch oven or other large pot with cooking spray and cook onions until translucent, approx 5 minutes. Dissolve vegetable base in 1 cup hot water. Add cauliflower, carrots, spices, vegetable base and water to pot and mix thoroughly. Bring to a boil, reduce heat, cover and simmer approximately 20 minutes or until vegetables are fork-tender. Allow to cool and use hand-blender to puree into yummy soup.

    Very Good
    I didn't have masala, so I didn't add it. I also don't like curry. But tasted delicious and added a little almond breeze to make it more creamy. thanks!
