    2 Tbsp oil
    1 large onion
    1 yellow or red pepper, diced
    2 cloves of garlic, minced
    1 lb. bratwursts (can substitute turkey smoked sausage, or vegetarian smoked sausage)
    1 can kidney beans (15 oz) - (I strain+ use low salt.)
    1 can diced tomatoes w/ basil & garlic (14.5 oz)
    1/2 tsp red pepper flakes (or cayenne pepper)
    2 tsp oregano, dried flakes
    1tsp thyme, fresh or pinch dried
    1 pinch salt
    1/2 tsp black pepper
    2 cups cooked brown rice
    1/3 - 1/2 cup water


Heat oil in large heavy skillet. Add bratwursts, onion, diced peppers, and garlic. While cooking, slice up bratwursts into smaller pieces. Cook just until browned.
Add spices, beans, and tomatoes. Stir to combine.
Add rice, stir to combine again.
Heat all together for about 15-20 min at medium to low heat. This gives ingredients time to blend.

Serving Size: Makes 8-10 hearty one-cup servings.
