Introduction
The first time I made this recipe, I was using up leftovers, but it's great for just having another way to present fish to the family.It is a very flexible recipe which almost begs for variation of seasonings, and additional ingredients that you might have on hand one time and not another. They can be perfectly plain or as gussied up as you wish.
The measurements given are accurate in terms of the particular batch I made this time. However, they should be viewed as approximations; because the various ingredients' texture and moisture levels will vary a bit each time...
A squeeze of fresh lemon or lime juice is a nice touch when serving, as is a sprinkle of capers over the top, though neither is necessary. There are, of course, some folk who believe that hot sauce is the condiment of choice here. You decide. Ingredients

Onions, raw, 0.50 cup, chopped
Parsley, 2 tbsp
Mashed Potatoes, 1.50 cup
Cod (fish), 6 oz
Bread crumbs, dry, grated, plain, 0.33 cup
Mayonnaise, Hellman's Light, 1 tbsp
pepperoncini, 3 tbsp
All Whites Liquid Egg White (3 Tbsp=1 large egg's white), 3 tbsp
Tips
A variety of ingredients can be added or substituted to vary the flavors or to use what you have on hand.
These can be frozen if you don't want to use them all at once.
Directions
Chop onion
If fish is not cooked, cook it (poaching is likely easiest), then cool it
Flake fish
Mash potato
Add in other dry ingredients
Add egg whites, mayo, onion, pepperoncini and parsley
Watch as you add and mix the egg whites and/or mayo and aromatics and stop when you get to a nice consistency that will hold together (if too dry, add a bit of milk or water to get the right consistency)
Bake or Sauté
1. If you bake these, they should go into a 350 ℉ oven for about 20 to 25 minutes. (ovens vary)
2. If you choose to sauté the fish cakes, don't crowd the pan. Either use a large skillet or cook them in batches.
Serving Size: Makes 16 small fish cakes
