Introduction

This hearty soup is easy to prepare on the stove or in the Slow Cooker. This hearty soup is easy to prepare on the stove or in the Slow Cooker.

Ingredients

    1lb extra lean ground beef
    1 medium onion, chopped
    1 28oz can of crushed tomatoes
    4 cups of low sodium beef broth
    1.5 cups chopped carrots
    3 stalks of celery, chopped
    3 cloves of garlic, minced
    1 tsp thyme
    1/2 cup of lentils (or more if you desire)
    salt and pepper to taste

Directions

In a large soup pot over medium heat, cook the ground beef and onions until the meat is brown and the onions are soft. About 7 minutes. At the last minute add the garlic and cook until fragrant. Add the veggies, tomatoes, broth, lentils and spices and bring to a simmer. Cook for at least an hour, the longer the better.
Alternately, you can brown your meat in a skillet, then throw all your ingredients in the slowcooker and simmer on low for 6-8 hours or high for 3-4 hours.
