Ingredients
*London Broil, 12 oz (Leftovers work great!)
Scallions, raw, 1 large
Sesame Oil, 2 tsp
*Snow Peas, fresh, 0.5 cup
Asparagus, fresh, 1 cup
Egg, fresh, 1 cup (4.86 large eggs)
Watercress, 1 cup, chopped
*Canola Oil, 3 tbsp
White Rice, long grain, 1.5 cup or 3 cups leftover
red pepper flakes to taste
gluten free soy sauce or tamari
Tips
Each step should only take 1-2 minutes.
Substitute chicken or shrimp for a lighter version.
Directions
Slice meat into thin strips and marinate it in a bowl with 1Tbs. soy auce, 1 tsp. of sesame oil and a pinch of red pepper flakes.
Cook rice if you don't have leftovers.
Heat a large nonstick pan or wok.
Put meat in pan and heat. (1 minute) Remove.
Add 1 tbs. of oil and vegetables except watercress, 1tsp. soy sauce cook till tender crisp. Add watercress and cook until wilted. Remove
Reduce heat, add a few drops of sesame oil, add beaten egg, cook until just done.
Remove egg and cut up.
Add 1tbs. of oil and fry the rice with 2 tbs. of soy sauce.
Add all ingredients back in, and heat.
Drizzle remaining sesame oil over the the top.
Serving Size: Makes 4 servings of about 2 cups
