Ingredients

    4 boneless chicken breasts, (6 oz each) pounded thin
    .25 cup milk fat free
    .5 cup panko bread crumbs
    1 tsp garlic powder
    1 tsp italian seasoning
    1 t dried chives
    3 Tbs butter
    3 cloves garlic, minced
    .5 cup chicken broth
    1 roma tomato, seeded and chopped
    1 cup heavy cream
    .5 cup grated parmesean cheese
    2 Tbs fresh basil minced
    .25 ground pepper

Tips

For a low carb side, serve with mashed cauliflower and roasted brocolli. Serve with rice or pasta for those not on low carb restrictions.


Directions

Melt butter in large saute pan over medium heat. Mix panko, garlic powder, italian seasoning, and chives. Dredge chicken breast in milk then bread crumbs. Saute in butter for 3-4 minutes per side. Remove chicken from pan and keep warm. Add garlic to same pan and saute for 1 minute. Add broth. Bring to a boil, scraping brown bits from bottom of pan. Reduce to half. Add cream and tomato. Boil 1 minute. Turn down heat and add remaining ingredients. Cook for another 3 minutes. To serve, pour sauce over chicken.
