Ingredients

    6 Cups Fresh Spinach (about 6 oz.)
    2 Hard Boiled Eggs, cut into quarters
    1 medium sweet red pepper, chopped
    4 pieces of bacon, cooked and chopped
    1/3 cup chopped pecans, toasted.

    Chrissy's Creamy Garlic Salad Dressing:

    1/2 cup fat free mayonnaise
    1/4 cup extra virgin olive oil
    3 TBSP red wine vinegar
    1 TBSP honey
    2 small cloves garlic, minced
    salt & pepper to taste

    Put all ingredients into a blender and blend until smooth.

Directions

Get two large bowls for serving. One large bowl for tossing. Toss each salad individually and put into serving bowls, using 3 cups spinach, 1/2 red pepper, 2 pieces of bacon and half of the pecans for each salad. Toss everything except egg with 2 TBSP of dressing. Top each salad with 1 egg and serve.
