Ingredients

    Chicken Breast, no skin, 1 lb., cut into bite-sized pieces
    Butter, unsalted, 2 tbsp
    Onions, raw, 1 medium, diced
    Celery, raw, 2 stalk, medium, diced
    Carrots, raw, 2 medium, diced
    Corn, sweet yellow, canned, cream style - 1 can
    Yellow Sweet Corn, Frozen, 16 oz bag
    *Potato, raw, 9 small (red potatoes, diced)
    Chicken Broth, 4 cup (32 oz carton)
    Milk, nonfat (skim milk), 2 cups
    *Flour, white, .25 cup
    Salt and Pepper to taste

Tips

top with shredded cheese if you want, but it adds calories and fat! It tastes great without it.


Directions

Melt butter in large stock pot, then cook chicken, onion and celery until chicken is done. Add in both corn, broth, carrots and potatoes, cover and let simmer for 15-20 minutes. Whisk flour into milk, until there are no lumps left, then add to pot. Simmer an additional 30 minutes.
