Introduction

Ingredients

    Sauce:
    1/2 tbsp peanut butter creamy or crunchy works
    1 tbsp sesame oil
    1 tbsp soy sauce
    1.5 tbsp splenda
    1 tbsp sesame seeds, divided


    4 oz healthy harvest spaghetti
    1/4 to 1/2 cup frozen mixed vegetables

Directions

Put spaghetti on to boil. While you are waiting, in a small bowl put all ingredient for sauce with 1/2 tbsp of the sesame seeds and stir well. When spaghetti is cooked to your liking, drain well. In the same pan as you cooked the spaghetti put about a tsp of sesame oil and place over low to medium heat. Add spaghetti noodles back in the pan and the mixed vegetables. 'Stir fry' the noodles until vegetables are no longer frozen and softening (about 2 or 3 minutes). Pour sauce over top of noodle/vegetable mixture and stir well. Continue 'stir frying' for another minute or so and then add remainder 1/2 tbsp sesame seeds. Remove from heat and serve warm.

Serving Size: Makes about 2 1-cup servings
