Introduction

A fresh, easy, salad to accompany grilled steak or chicken. A fresh, easy, salad to accompany grilled steak or chicken.

Ingredients

    1 Pint grape tomatoes
    1/2 bunch of fresh basil
    1/2 cup crumbled feta cheese
    6-8 tablespoons balsamic vinegrette

Tips

Experiment with cheeses - I have used tomato herb, straight feta, and even a little Gorgonzola. This goes really well with corn on the cob and steak.


Directions

Rinse and wash basil and tomatoes. Using a sharp knife, cut each tomato in half (length or width--your choice) and place in a medium bowl. Crumble feta cheese into bowl. Using kitchen shears, cut small pieces of basil into mixture (I usually do 1/8" slices). Next, add vinaigrette and stir mixture. Cover dish and place into refrigerator for 30 minutes to marinate.

Serving Size: Makes approximately 6-8 1/2 cup servings
