Ingredients

3 garlic cloves, finely chopped
1 medium onion, finely chopped
4 carrots, peeled, cut into 1-inc chunks
3 celery stalks, cut into 1-inch slices
5 tsp vegetable bullion clubs
5 cups water
1/2 head cabbage, shredded (~ 1 lb.)
1/2 lb. soy beef crumbles
2 cups crushed canned tomatoes
6 tablespoons lemon juice
3 tablespoons Splenda brown sugar
2 tablespoons chopped fresh dill
1/2 teaspoon fresh thyme
1 teaspoon freshly ground pepper
Directions
In a 4 quart pot, cook garlic, onion, carrots, celery and 1/2 of the water and bullion.
Add the cabbage, "beef" crumbles, and the remaining water and bullion. simmer for 15 minutes.
Add tomatoes, lemon juice, brown sugar, dill, thyme, and pepper.
Cook for 20 minutes.
Makes 8, 1 cup servings.
