Introduction

Ingredients

    2 cans of chicken stock, 2 cans of water
    2 T extra virgin olive oil
    1 medium sized onion, diced
    2 carrots, diced
    2 stalks of celery, diced
    handful of chopped kale (optional)
    handful of chopped parsley (optional)
    1 can small white beans
    1 half chicken breast
    16 Mama Lucia turkey meatballs (optional)
    1/2 C. orzo
    1 T chia seeds (optional)

Tips

top with 1 T. grated cheese


Directions

saute onion, carrots and celery in olive oil, add stock, water and remaining ingredients. cook until vegetables are tender.

Serving Size: makes approx 6 one cup servings
