Ingredients

Marinade:
1 Tbsp brown sugar
2 cloves garlic, minced
1 tsp ground ginger
1 Tbsp lime juice
2 Tbsp low sodium soy sauce
Peanut Sauce:
1 Tbsp brown sugar
1 Tbsp low sodium soy sauce
1 clove garlic, minced
2 Tbsp smooth peanut butter
2 Tbsp hot water
2 Tbsp lime juice
12oz skinless chicken breast, cut into strips
5oz Lo Mein noodles
1 cup cooked broccoli
1 Tbsp sesame oil (or olive oil)
1 Tbsp low sodium soy sauce
Tips
The peanut sauce can be "tweaked" to taste. Also, reported sodium includes marinade (which is not consumed in final product) so it is a bit inaccurate (too high).
Directions
Mix all marinade ingredients well; marinate chicken breast at least one hour in refrigerator.
Combine peanut sauce ingredients and mix/whisk until smooth. Set aside. (Microwave approx. 25 seconds prior to use.)
Boil Lo Mein noodles for 4 minutes, and steam or boil broccoli. Drain.
Grill chicken strips until white all the way through.
Stir-fry noodles and broccoli in pan or wok with sesame oil and 1 Tbsp soy sauce. (Optional: sprinkle with sesame seeds). Add approx. 1 Tbsp of peanut sauce and toss to coat. Top with grilled chicken and a little more sauce. Serve with additional sauce on the side for dipping.
