Introduction

I like to eat my big meal in the morning to keep me going. Who wants to cook anything major that time of day though? So I whipped this up this morning and it smells & tastes great! Its a little high on the calorie/fat side, but I find I have a much easier time getting to lunch and eating lighter the rest of the day if I eat this way. Ingredients

Diluigi 94% Lean 6% Fat Fresh Ground Pork, 4 oz (remove)
Egg Noodles, enriched, 1 cup (remove)
    Spinach, fresh, 1 cup (remove)
Ricotta Cheese, whole milk, .5 cup (remove)
*Garlic - Freeze Dried, 1 serving (remove)
    Basil, 1 tbsp (remove)
    Parsley, dried, 1 tbsp (remove)
*Extra Virgin Olive Oil, 1 tbsp (remove)

Tips

I do find the noodles stick a bit here, Next time I make it I'm going to try putting the pork down first and see if it helps.

Directions

Preheat the over to 425. Grill the pork with garlic, olive oil, basil and parsley. I prefer fresh basil but dried does in a pinch. Drain off the juice. Cook noodles or use leftovers. In a small glass baking dish, layer noodles, pork, spinach and top with ricotta. You can easily use lowfat to cut calories here but since I make my own ricotta it seems silly to go buy some! Pop in the oven until the Ricotta begins to brown on the top. This takes a very short time, maybe 10 minutes. Enjoy!
