Ingredients

Olive oil cooking spray
10 oz fresh spinach
4 eggs
1/2 cup shredded mozzarella
1/2 cup shredded reduced fat sharp cheddar
1 (8 oz package) chopped Baby Bella Mushrooms
1/2 Tbsp, unsalted butter
12 Tbsp skim milk
Salt and Pepper, to taste
Tips
In the photo I made homemade pie crust, but this recipe is for use without the pie crust. It is lower in fat and calories without the crust and still very tasty.
Directions
Preheat the oven to 375F.
Spray large skillet with olive oil cooking spray. Saute the mushrooms until soft, about 5-6 minutes. Set Aside.
Place the spinach in the skillet that you used for the mushrooms. Add 1/4 cup of water. Using medium heat, cook the spinach until just wilted, about 3-4 mins. Pack in the spinach with a spatula. Drain all the excess water.
In a large mixing bowl, whisk the eggs until well blended. Add the cooked mushrooms, spinach, cheeses, butter and milk to the eggs. Mix well. Season to taste with salt and pepper.
Divide evenly among the 12 muffin cups. If not using not stick muffin pan you can use muffin liners or spray with Olive Oil.
Bake for about 20-25 minutes, or until a tester/toothpick inserted in the center comes out clean. (Start testing at 20 minutes, do not overcook)
Leave in the pan for a 5 minutes then remove and cool on a cooling rack.
Can be frozen and reheated in microwave for a quick breakfast in the morning have 2.
